Strawberry Broccoli Salad

A healthy summer twist on the classic Waldorf salad, Strawberry Broccoli Salad features fresh strawberries, toasted almonds, extra-sharp cheddar cheese, and Greek yogurt. A perfect potluck side dish or light lunch.
Ingredients
  • 5 cups fresh broccoli florets
  • 3 ounces extra-sharp cheddar cheese, cut into 1/2-inch cubes (about 1/2 cup)
  • 1/3 cup red onion, finely diced
  • 1/4 cup roasted unsalted almonds, coarsely chopped
  • 2/3 cup non-fat plain Greek yogurt
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon apple cider vinegar
  • 1/8 teaspoon kosher salt
  • 1 cup fresh strawberries, sliced
Directions
  1. In a large bowl, toss together the broccoli, cheddar, red onion, and almonds. In a small bowl, combine Greek yogurt, sugar, vinegar, and kosher salt. Pour over broccoli mixture, then toss to coat. Gently stir in strawberries. Serve chilled or at room temperature.
