Muttai Dosa | Egg Roll Dosa
Muttai Dosa | Egg Roll Dosa is a delicious street food snack in Southern India. When you make it at home, you get to make it healthy with less oil and homemade dosa batter. There are multiple ways you can make this dosa, using either scrambled eggs or an omlette. Either ways, this egg dosa roll recipe is simple and quick to make and very delicious. It also makes a great lunch box for kids. 
Makes: the dosa batter recipe makes 20 to 25 medium size dosa's
But the muttai/ egg dosa here will only make 4 rolls. 
Ingredients 
4 eggs, either made into an omlette or scrambled. (See the Mumbai Style Egg Burji | Spicy Scrambled Eggs recipe that I used for the filling) 
Method for making dosa’s from the batter
For making dosa's; heat the skillet on medium heat. Pour a ladleful of batter over the skillet and spread the batter evenly using a spiral motion from inside out. Pour a teaspoon of oil or ghee around the edges and. Increase the heat and cook for couple of minutes until the bottom of the dosa starts to turn golden brown. Once it begins turning brown remove from the pan and keep aside. Make a couple of dosa and stack them one over the other.
To make the rolls you want the dosa's to be soft and not crisp. So take care not to brown them too much. Stacking them one over the other also helps build moisture, making the dosa's soft.
Place a the cooked dosa on a flat surface. Place a small portion of the egg burji towards one side and roll the dosa inwards to form a cylinder. 
Press it down and cut into half in an angular position. The Egg Dosa Rolls are now ready.
Serve the Egg/ Muttai Dosa Rolls for a breakfast or cut them into smaller angles and serve as an appetizer for parties. It tastes delciious.
