Dabeli | Buns Sandwiched with Spicy Mashed Potatoes Pomegranates and Sev
Dabeli is India’s answer to the western burger that is popularly sold on the highways of Gujarat. The buns are spiked with a sweet and spicy potato mixture topped with onion, pomegranate, and fresh Lasan Chutney and Sev. The best Dabel’is I have eaten is at Karnavati Dabeli, Ahmedabad which is one of the oldest places selling these delicious eats. If ever you happen to visit Gujarat this is surely a place that you must eat at.
Makes: 8 dabelis
Ingredients for the dabeli
  • 8 small pav buns
  • 1 large onions finely chopped onion
  • 1/2 cup Sev
  • 1/4 cup Garlic Chutney
  • ½ cup fresh pomegranate seeds
  • butter for toasting the buns
  • a small bunch of chopped coriander leaves
Ingredients for dabeli filling
  • 2 cups boiled and mashed potatoes (3 to 4 medium sized potatoes )
  • 1 teaspoon red chilli powder
  • 1 teaspoon roasted coriander seeds, powdered
  • 1/4 teaspoon cinnamon powder
  • 1/4 teaspoon roasted cumin, powdered
  • 1/4 teaspoon asafoetida powder
  • 2 tablespoons Date Tamarind Chutney
  • 2 tablespoons oil
  • salt to taste
Method
  • Heat oil in a pan on medium heat; stir in all the filling ingredients and sauté for a few of minutes until well combined. Keep aside

  • Slice the pav-buns into half horizontally. Spread butter and toast them on the pan on both sides, until the surface is lightly golden and crisp. Turn off heat and take pav buns off the pan and place on a platter.
  • Spread a large dollop of the dabeli filling on the lower half of the buns; sprinkle the chopped onion, coriander leaves, Sev, and pomegranate on top of the filling.
  • Smear the Garlic Chutney on the top half of the bun. Place this top half of the bun on the lower filled half.
  • Serve the delicious Dabeli over a cup of Masala chai or make it as one of the main dishes for your parties.
