cranberry compote

Cranberries

INGREDIENTS

  • 225g fresh cranberries
  • 125g caster sugar (to taste)
  • Grated orange rind
  • Juice of 2 oranges (100ml)
  • Pinch of freshly grated nutmeg
  • Cinnamon stick

METHOD

How to make cranberry compote

1. Grate or zest the rind from one of the oranges and squeeze the juice from both oranges.
2. Place all the ingredients into a heavy based pan.
3. Cook over a low heat until the sugar has dissolved. Continue to cook (simmer) the cranberries for 5-8 minutes until they are soft.
4. Turn the heat off when most of the cranberries have collapsed (gone pop). Remove a few whole cranberries and the cinnamon stick and use a potato masher to mash the sauce.
5. Return the whole cranberries to the sauce and pour into a jar or small bowl.
6. Keeps for 10 days if refrigerated and can be frozen.
