Atukula Atlu(Dosa with flattened rice or rice flakes)

Atukula Atlu(Dosa with flattened rice or rice flakes)

Ingredients:

Atukulu(flattened rice)-1 cup
 Rice-1cup
Salt- to taste
Sour curd or buttermilk-2cups
Oil-1tbsp
Baking powder-1tsp(if necessary)

Method:

Soak atukulu and rice in sour buttermilk for about four hours. Grind them to make a fine batter. While grinding them add very little water in it. Let the batter should be thick only. Leave it to ferment for at least eight hours. As the batter ferments, the consistency will looses automatically. If the batter does not ferment properly, it won’t loosen.  If the does not properly add 1tsp of baking powder and water to make it loose. Add salt to the batter just before making Dosas.
The consistency of the dosa batter should be as shown in the picture.


Heat the dosa tawa.  Sprinkle water on the hot tawa to check the heat of tawa. If the water sizzles then the tawa is ready for dosa preparation. Take one ladle full of batter and pour it on the tawa. Do not spread the batter. Allow the batter to spread on its own. Pour one table spoon of oil on the dosa and cover it with a lid. Allow the dosa to cook for a minute on a medium heat till it turns light brown in colour. Flip it and again cook for half a minute without lid. Now the fluffy and soft atukula atlu is ready. Serve it hot with coconut chutney.
